3 x vegan snack recipes with sweet potatoes
I’m loving food prepping at the moment. It keeps me sane, it’s therapeutic in this chaotic situation. Vegan snack prep with sweet potatoes is super easy, and not many other ingredients are needed. Just some vegan basics like vegan milk and yogurt. We always use Kaslink AITO oat-based products, because they taste super delicious (mildly oaty and sweet) and they work so well in overnight oats and smoothies!
I usually buy 3-4 medium size sweet potatoes and this is what I do with them:
- peel
- chop
- steam or cook
- cool and refrigerate 1/3
- cool and freeze 1/3
- use about 1/3 immediately
Sweet potato caramel with quick oats
First let’s make sweet potato caramel for delicious 5 minute oats:
- about 1/2 cups soft cooked sweet potatoes
- 1/3 cups cashew butter
- 1/4 cups maple syrup (or more if you want it sweeter)
- 1/4 cups AITO Oat drink
- pinch of salt
Mash sweet potatoes and cook with other ingredients in medium heat. Blend until smooth and creamy.
5 minute oats:
- 1 cups oat bran
- pinch of salt
- 2 cups AITO Oat snack (oat-based yogurt)
- 1 cup AITO Oat drink
Mix everything together. Layer in a jar with sweet potato caramel, decorate with granola and berries. Enjoy!
Chocolate smoothie made with frozen sweet potato
Now is the time to use some frozen sweet potatoes!
- 1 1/2 cups frozen sweet potato
- 4 frozen bananas
- 1/4 cups cacao powder
- 1/3 cups nuts such as cashew and macadamias
- 1/2 cups or more AITO Oat drink (depending on how thick you want the smoothie)
Blend all until smooth and creamy. Add sweetener if needed. Decorate with granola and berries. Enjoy!
Chocolate-vanilla pudding
If you have leftover chocolate smoothie, I recommend testing this delicious pudding, which is more like a dessert than snack 🙂
- AITO Oat Vanilla
- leftover chocolate smoothie (or make some more!)
Whip AITO Oat Vanilla until it’s fluffy. Mix with chocolate smoothie, enjoy!
