Current mood: I need a chocolate chip cookie. Better make it the size of a pizza to satisfy my chocolate cravings 😉 Great news – I (and you too!) can get this delicious treat in my hands about 20 minutes! It really is super easy to make this vegan, gluten-free Christmas chocolate chip pizza. With a subtle cinnamon & cardamom flavor, almonds, raisins and dark chocolate chips this pizza is a lovely (and huge!) Christmas treat. You can top it with whatever sweets you like but I’m sticking to cinnamon coconut cream and melted velvety chocolate. Christmassy chocolate cravings totally satisfied!
Isn’t there something very comforting about a giant Christmas cookie? This one is soft, chewy, and filled with wholesome ingredients. The recipe is loosely based on The Ultimate Giant Vegan Chocolate Chip & Chunk Cookie recipe from Vegan Richa.
What makes this recipe stand out from the regular wheat-egg-white refined sugar-butter recipes are these healthier ingredients:
- Gluten-free flours: I’ve used gluten-free oat flour and white rice flour instead of regular wheat flour. I often find this combination to be the best (and easiest) gluten-free flour mix for baking. Almond flour would work well in the mix too!
- Egg replacement: I’ve used 2 chia eggs. 1 chia egg = 1 tbsp chia seeds ground into a meal + 2,5 tbsp water.
- Sweetener: A combination of coconut sugar, blackstrap molasses and vegan dark chocolate bring just the right sweetness. You’ll never miss refined white sugar!
- Butter replacement: Almond butter & cacao butter blended together form the yummiest butter to be used in choco chip cookies and other vegan baking as well.

- [b]Dry ingredients[/b]
- 1/3 cup oat flour
- 1/3 cup white rice flour
- 1/3 cup coconut sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp ground nutmeg
- 1/8 tsp salt

- [b]Wet ingredients[/b]
- 2 chia eggs (or other vegan egg replacement) (1 chia egg = 1 tbsp chia seeds/chia meal + 2,5 tbsp water)
- 1/4 cup melted cacao butter (about 1/3 cups cacao butter buttons)
- 1/4 cup almond butter
- 1 tbsp molasses
- + 1/3 cups vegan chocolate
- and 1/3 cups nuts, raisins or other dried fruit to your liking. I used chopped almonds and raisin.

- [b]Toppings:[/b]
- Whipped coconut cream:
- 1/2 cup creamy part from a coconut milk can (chilled overnight)
- 1 tsp agave syrup
- 1/2 tsp cinnamon
- 1/4 tsp vanilla powder
- + a few pieces of vegan dark chocolate
- Preheat oven to 375 F / 190 C.
- [b]Chocolate Chip Pizza:[/b] Make chia eggs: mix 2 tbsp chia meal with 5 tbsp water. Stir well and let set for at least 5 minutes.
- Melt cacao butter in a double boiler until completely liquid.
- Mix dry ingredients.
- In a separate bowl use a good whisk to mix all the wet ingredients well together.
- Combine dry ingredients to wet ingredients little by little mixing well.
- Add chopped dark chocolate, nuts, raisins (or whatever you like) and mix into the batter well.
- Put the cookie batter onto a baking sheet lined with parchment paper. Flatten it into a round pizza shape.
- Bake in the oven for 8-10 min.
- The cookie will be very soft straight out of the oven so let it set for a while on the baking sheet. When you chill the cookie in the fridge (overnight) it’s easier to cut the cookie into pizza slices.
- [b]Toppings[/b]: whip the coconut cream ingredients until soft and fluffy. Put a good dollop of cream on top of each pizza slice.
- Melt dark chocolate in a double boiler and drizzle “stripes” on top of pizza to decorate it.

Oh yeah, this totally fits my current mood too!
