Hi! I’m back with a crazy cool recipe: Strawberry cauliflower nice cream! Sounds a bit crazy, right? But I swear it doesn’t taste crazy at all, just delicious and creamy. After making cauliflower smoothies all through spring (and now continuing in the summer), I thought this lovely nutritious veggie would be amazing in nice cream as well. And I was totally right!
Getting creative with nice cream ingredients
This nice cream is dreamy CREAMY, fluffy and yummy. It’s everything I could hope for in a nice cream made with wholefood ingredients. I combined frozen cauliflower and frozen banana with some of my favorite summer fruits: strawberries and donut peaches to get lovely summer flavors. The fruits were so sweet I didn’t need extra sweetener, but you can certainly add more sweetness if you like.

ps As an ice cream lover, I have a bunch of delicious vegan ice cream recipes on the blog. Here are my favorites:
Matcha frozen yogurt ice cream
Tahini caramel swirl ice cream
Chocolate, mint chocolate and strawberry nice cream
- 1 cup frozen cauliflower florets
- 1 cup strawberries (fresh or frozen)
- 2 frozen bananas
- 2 (donut) peaches
- 1/3 cup full fat coconut cream
- 1/2 tbsp lemon juice
- Toppings: strawberries + tiny basil or other fresh herb of choice
- Take frozen bananas out of the freezer about 5 minutes before blending.
- Blend everything together in a high-speed blender until totally smooth.
- Taste and add sweetener if you like.
- You can enjoy this delight right away or let it set in the freezer for at least 30 minutes to get a scoopable nice cream.

That has to be the cutest most perfect jar of strawberry pink summer sweetness I’ve ever seen! With the tiny basil on top too…I cannot even with this cuteness <3 I can't wait to try this–I have everything already in the freezer so all I need is donut peaches now, and I just saw them pop up for the first time at the store yesterday. I can see why this lovely nice cream so sweet all on it's own though and so creamy too. You are amazing!

Is there something I can substitute for the coconut milk?

Thanks for the good question! Any thick & creamy plant-based milk would work. I sometimes use thick oat milk (oat milk for coffee). If you don’t have any creamy plant-based milk a regular one will work too, but the nice cream will probably not be as creamy. I hope this helps!

Do you just use raw cauliflower or do you boil them in advance?

Thank you for the good question! If you can tolerate raw cauliflower well (if you don’t get any digestive issues / stomach aches), I would just wash the cauliflower, cut it into florets and freeze them raw. But if you can’t tolerate them raw, I definitely suggest you boil or steam them until soft but not mushy soft and after cooling freeze them. Wishing you a lovely day!
