This post is about two of my favorite foods: chia pudding + overnight oats. I actually couldn’t decide which one I love the most, so a combination felt just right. Especially as this specific combination also has the perfect vegan caramel sauce, crunchy peanuts AND chocolate. With a pack like this, it is most convenient to call this Snickers chia overnight oats as I assume the word snickers brings some caramell-y peanut-y and chocolate-y images in mind. This snack is a whole lotta healthier than the original, though.
A nourishing snack or breakfast combo
My snack appetite is easily satisfied when these elements come together: chia seeds, plant-based milk, rolled oats and nut butter. These ingredients (plus some sweetener and a pinch of salt) is all you need to create the perfect satisfying healthy snack or breakfast. You don’t even need the nut butter, but in my opinion it gives chia oats a lovely texture – not to mention a creamy nutty flavor!
Or dessert?
Although this Snickers chia overnight oats jar might look like dessert, it’s definitely more snack or breakfast than dessert in my books. Of course the generous chocolate drizzle on top takes this creation to a near dessert-level, but otherwise the ingredient list is pretty wholesome, and you can of course leave out the chocolate (but I don’t recommend it 🙂 )
The easy way to make snickers
So how to make this? Just mix chia oats ingredients, let sit in the fridge for about 30 minutes or overnight, and add crushed salted peanuts, caramel and chocolate on top when you want to eat the oats. And there you go – an absolutely delicious snack jar is ready to be grabbed as breakfast/snack or even lunch if you have a big enough jar. There’s just something irresistible about the sweet & salty combination 🙂

- [b]Chia overnight oats[/b]
- 1 cup of unsweetened almond milk (or plant-milk of choice)
- 1/3 cups gluten-free rolled oats
- 3 tbsp almond butter
- 2 tbsp chia seeds
- 1 tsp maple syrup (or sweetener of choice to taste)
- 1/8 tsp vanilla bean powder
- pinch of salt
- [br]
- [b]Vegan caramel[/b]
- 3 tbsp smooth organic peanut butter
- 1,5 tbsp unsweetened almond milk (or plant-milk of choice)
- 1 tsp maple syrup (or sweetener of choice to taste)
- pinch of salt

- [b]Other toppings[/b]
- 1/4 cups chopped salted peanuts
- Few pieces of vegan dark chocolate, melted
- [b]Chia overnight oats:[/b] Whisk all ingredients in a bowl until smooth. Store in the fridge for at least 30 min or overnight.
- [b]Vegan caramel:[/b] mix all caramel ingredients with a spoon until smooth. Add more plant milk if needed.
- [b]Toppings:[/b] melt dark chocolate in a water bath and chop peanuts.
- [b]Assembling the Snickers jars:[/b] Scoop chia-overnight oats into two small jars. Add half of the chopped peanuts, vegan caramel (generous amount), and drizzle melted chocolate on top. Top with the remaining chopped peanuts.
- Enjoy this healthy delicious treat as a snack or brekkie 🙂

Thank you beautiful!! I actually don’t like classic caramel either, because it is way too sweet for me (I like to add tahini or a lot of nut butters to vegan caramels to make it less sweet!).
