So happy to let my big secret out in the open: I made a cookbook together with my friend Tuulia from Wellberries ! We both share a huge passion for healthy plant-based food, and especially Porridge in all its forms is a subject close to our hearts. Our cookbook is all about wholesome & delicious porridges – porridge for breakfast, lunch, snack and dessert 🙂 Come along and enjoy a whole day of porridge with us!
All the recipes in our book Puuron uusi aika are gluten-free, plant-based and free from refined white sugar but definitely not free from flavor. We love to combine nutritious ingredients in a creative way, and our aim is to show porridge is so much more than plain oatmeal.
Our book (published by Atena Kustannus) contains over 50 porridge recipes, both raw and cooked, sweet and savory, and also a bunch of plant-based pudding and yogurt recipes. We also fight against food waste with a section dedicated to leftovers – how to create scrumptious cookies, waffles and other snacks from porridge leftovers.
One of our goals is also to show how porridge can be eaten all through the day: as a raw version to start the day feeling energized, as a super nourishing savory lunch or dinner, a healthy & wholesome sweet snack and also as a melt-in-your-mouth dessert. I’m so happy to share four recipes from our book for every occasion of the day (sorry, only in Finnish at the moment, but will translate them soon!):

And now, let’s eat porridge!
- 1 dl gluteenittomia kaurahiutaleita
- 2 dl kasvipohjaista jogurttia
- 1 1/2 dl täysrasvaista kookosmaitoa
- 1 dl mustikoita
- 1 1/2 rkl chiasiemeniä
- 3 tl kookossokeria
- 1/2 tl ceyloninkanelia
- ripaus suolaa
- [br]
- Päälle: mustikoita ja 2 rkl mantelivoita tai muuta pehmeää pähkinävoita
- Sekoita hyvin kaikki tuorepuuron ainekset ja kaada tiiviiseen lasipurkkiin.
- Anna tekeytyä yön yli tai vähintään 2 tuntia, jotta kaurahiutaleet pehmenevät.
- Kun puuro on valmista nautittavaki, lisää päälle mantelivoita ja sekoita sitä myös puuron joukkoon.
- Tarjoile mustikoiden kanssa.
- 1 dl (noin 60 g) pilkottua tummaa suklaata
- 1 1/2 dl kaurajauhoja
- 1 dl vaaleita riisijauhoja
- 1 tl leivinjauhetta
- 1/2 tl ruokasoodaa
- 1/4 tl suolaa
- 2 dl kaurapuuroa tai muuta maustamatonta tai makeaa puuroa
- 1 dl mantelivoita
- 2 rkl sulatettua neitsytkookosöljyä
- 1 dl kookossokeria
- Laita uuni lämpiämään 200 asteeseen.
- Pilko suklaat.
- Sekoita jauhot, leivinjauhe, ruokasooda ja suola.
- Jos puuro on kylmää, lämmitä sitä hieman.
- Sekoita puuron joukkoon mantelivoi, sulatettu kookosöljy ja sokeri.
- Sekoita kuivat aineet joukkoon ja lisää lopuksi suklaapalat. Huom: taikinan kuuluu olla tahmeaa.
- Muotoile taikinasta tasakokoiia, pyöreitä keksejä. Keksit kannattaa muotoilla kostein käsin, jotta taikina ei tartu käsiin.
- Paista keksejä 15-18 minuuttia tai kunnes ne ovat kauniin ruskeita ja pinnalta rapeita.

You put popcorn on porridge. That alone tells me that this book must be bursting with all kinds of creative and unexpected ways to porridge 🙂 Coming from you I already could’ve guessed that though. And I see a bit of the savory side of things too, how fun! I love the idea to bake with leftover porridge, those cookies look perfect.
