When I think of luxury berry porridge, I think of a comforting bowl of warm creamy oatmeal with lots of toppings so that each spoonful tastes a bit different. One of my favorite luxury porridges right now is aronia berry porridge but you can make this with any berry!
How to make luxury berry porridge
There are a few simple steps in making luxury berry porridge. It all starts with porridge oats of course. Or you can choose any grain you like: buckwheat, millet, quinoa, rice etc and cook them into a porridge. I love all this variety, but my first choice is always oats. I mostly use gluten-free rolled oats or gluten-free quick oats.
How to cook creamy porridge
The first thing to make is the creamy base. I like to cook porridge in half water and half oat milk. For example I use 1/2 cup oats, 1/2 cup water and 1/2 cup oat milk. The best oat milk for porridge is a thick, creamy oat milk for coffee, my favorite is AITO Barista with a mild sweet flavor.
I first bring the water, oat milk and oats to a boil. Then I reduce the heat and stir for a few minutes. I put on the lid, lower the heat to minimum and let simmer under the lid for a minute or two. Then I take the pan off the heat and let stay with the lid on for another few minutes. Then it’s ready! If the porridge seems to thick at this point, I add more oat milk. I also add a pinch of salt and stir it in. Sometimes when I want a very creamy porridge I also add coconut oil.
How to make porridge healthier
Luxury berry porridge not only means adding healthy berries, but also other ingredients to make the porridge healthier. My go to ingredients to make porridge healthier are: ground flax seeds and chia seeds. These two seeds are neutral in flavor, and they add a good dose of healthy fats and vitamins. They also make the porridge more filling, which means porridge is a very satisfying breakfast or evening snack.
How to make porridge more delicious
Pimping your porridge with all kinds of delicious toppings is the most fun part of making luxury berry porridge. Basically you can put anything on top: chocolate, berries or other fruit, nut butters, nuts, seeds, granola.

To give you more inspiration than just a list of ingredients I want to share all the yummy berry porridge flavors I’ve made this fall starting with aronia berry porridge:
Aronia berry porridge
Aronia berries (or chokeberries) grow in Finland, Russia, Poland and parts of North America and Canada. They are super healthy berries filled with antioxidants. When eaten raw the berries are very sour and tart, so they are often used together with sweetener to make jams, juices, pies and even wine.
If you want a smooth berry porridge I recommend blending the aronia berries (or any berries you’re using) first like I did. Then I mixed this berry puree to the porridge when it was cooked.
The porridge is not sweet at this point, so I added chopped vegan raspberry chocolate and vegan nougat chocolate on top, some lingonberries, raspberries and almond butter.
Lingonberry caramel porridge
This lingonberry porridge is equally delicious with cranberries. The recipe for this delicious porridge is already on the blog, you can find it here. Or you can make a quick version:
First make a quick vegan caramel by mixing ~2 tbsp nut butter (any nut butter works), 1 tbsp oat milk, 1/2 tbsp syrup and pinch of salt. On top of porridge add lingonberries or cranberries, caramel, Ceylon cinnamon and chopped nuts.
Strawberry chocolate porridge
A few (frozen) strawberries on the bottom of a porridge bowl, hot porridge on top and mix until you have a lovely pink strawberry porridge. You can cut the strawberries into smaller pieces with scissors. Chopped chocolate, macadamia nuts and coconut sugar sprinkled on top. This is my eldest daughter’s favorite porridge.
Blueberry cardamom porridge
A handful of frozen blueberries on the bottom of a porridge bowl, add ground cardamom and mix until you have a beautiful purple porridge. Add more berries, maple syrup and nut butter on top. This is my son’s favorite porridge.
Whipped berry porridge
Whipped berry porridge is a special gluten-free porridge made from oat bran. It is whisked until fluffy and eaten either warm or cold. You can use any berry to make this Finnish specialty. Here’s the recipe.
Berry jam porridge
Place a dollop of berry jam in the middle of your porridge, add nut butter, granola, chopped vegan white chocolate and berries on top.
