Crunchy oat cookie granola is something I’m urging you to make as soon as possible. In all its simplicity it is the best granola ever. Minimal ingredient list, maximum oat cookie crunch flavor. Vegan and gluten-free.
I can’t take any credit for this recipe. It is my beautiful friend Marita’s recipe from her book Ruokaan Rakastunut (Fallen in Love with Food). This super woman is not only a swirly smoothie queen but a granola queen as well. Oh and have you seen her beautiful Instagram page: @myblissktchn ? The best granola ever
When I make homemade granola I try to make it as healthy and nourishing as possible (this means low in sugar and low in oil etc). But the truth is: sugar free / low sugar or oil free / low oil granola can never be as good as a granola with enough sweetness and oil to crunch it up!
And Marita knows this 🙂
She uses both sugar (Indian sugar) and maple syrup in her recipe. Not too much, just the right amount. There’s also coconut oil which I think works best of all oils, because it adds a yummy crunch and flavor to the granola. The flavor is not too coconutty, and if you fear it will be, just use a neutral coconut oil.
Some granola recipes use all kinds of nuts and seeds, but this recipe is as simple as can be: just oats and almonds. These two main ingredients together with sweetener and oil makes the granola taste like oat cookies. Crunchy, cozy, delicious.
How to make crunchy oat cookie granola
Prep time: 40 minutes
Measurement: US cups
- 2 cups rolled oats
- 1,5 cups chopped almonds
- 1 tsp vanilla bean powder
- ~1 tsp good quality salt
- 3 tbsp brown sugar
- 1/2 cups maple syrup
- 1/2 cups melted coconut oil
Preheat oven to 300 F / 150 C. Mix all dry ingredients in a bowl and add syrup and oil. Mix until oats and nuts are fully coated in oil and syrup. Press granola evenly on a baking sheet lined with parchment paper and bake for about 25-30 minutes. Stir about 2-3 times when baking and let cool in the sheet before transferring granola into a glass container.
