Christmas parfait is a simple holiday dessert easy to make for the whole family in under 30 minutes! The secret of the parfait is a delicious smooth and thick gingerbread date caramel.
When I was little we used to have this very traditional creamy plum quark as a dessert after Christmas dinner. This parfait has a very similar base, except that it’s dairy-free.
Dairy-free quark parfait
It’s so easy to make dairy-free treats nowadays – we have an amazing variety of dairy-free quark and whipped cream products on the market in Finland. For this particular one I chose Alpro Go and Alpro whip, which I mixed together to get a creamy quark. You can also make this coconut or oat-based using coconut whipped cream and coconut yogurt or oat for whipping and oat snack (“yogurt”), but the result won’t be like quark. It will taste good though whatever you decide to use!
Recipe for the Christmas parfait
Quark
- 1 cup (2,5 dl) plant-based whip (measured before whipping)
- 400 g Alpro go natural or vanilla or similar dairy-free “quark”
- 1 tsp vanilla sugar
- optional: about 1/2 tbsp lemon juice
Whip plant-based cream until fluffy. Add dairy-free quark and vanilla sugar and keep whipping until fully mixed. Taste and add lemon juice if you want some zing!
Gingerbread date caramel
- 100 g / 3,5 oz dates such as medjool
- 3-4 tbsp plant-based milk
- 1 tbsp cashew butter
- 1/2 tsp gingerbread spice
- pinch of salt
Blend until smooth, creamy and thick and swirl into the quark or swirl into individual jars of quark.
This stovetop Christmas granola is perfect on top of the parfait and only takes about 5 minutes to make!
