Cake in a jar x 3 for dessert
Cake in a jar has always been one of my favorite desserts. So easy to make with whatever sweet ingredients I have, and always with a generous dollop of vegan whipped cream.
These cakes take about 15-45 minutes to make and you don’t need fancy ingredients. For pretty decorations use any berries and flowers you find in nature (just check they’re not poisonous!). For example edible lilacs would make amazing cute and flavorful decorations!
Strawberries and cream cake in a jar
Prep time 45 min
If you are using the whole cake, this makes about 8-10 cakes in a jar.
This cake is a basic sponge cake recipe, which I love to use when making berry cakes. Check out this amazing strawberry layer cake recipe.
Sponge cake
- 150 ml oat milk
- 100 ml vegan yogurt
- 100 ml melted coconut oil or other oil you prefer (neutral)
- about 1/2 cups of strawberries
- 195 g flour
- 45 g almond flour
- 130 g sugar
- 1 tsp vanilla sugar
- 1,5 tsp baking powder
- 0,5 tsp salt
For the cake
- about 4 cups of vegan whipped cream
- strawberries
Crumble sponge cake into jar and decorate with vegan whipped cream, strawberries and flowers.
Cookie cake in a jar
Prep time 15 min
Makes about 4 small cakes and 2 big cakes in a jar
Cake crust
- 5 Digestive cookies
- 3 big dates or 5 smaller dates
- ~1 and 1/2 tbsp coconut oil
- ~1/4 tsp ground cardamom
- ~1/8 tsp salt
For the cake
- 1/2 cups berry jam
- 2 cups vegan whipped cream
- fresh berries
Blend cookies together with other ingredients until you have a crumbly crust. Let cool in the fridge for a while.
Divide cookie crumble into jars and decorate with whipped cream, berries and flowers.
Chocolate crumble cake in a jar
Prep time 15 min
Makes about 4 cakes in a jar or 2 big jars (as pictured)
Crust
- 40 g dark chocolate
- 1/2 cups gluten-free rolled oats
- 1/4 cups nuts such as cashews, walnuts, pecans
- 3 tbsp maple syrup
- 2 tbsp almond or cashew butter
- a few pinches of salt
- For decoration: vegan whipped cream and strawberries
For the cake
- 2 cups vegan whipped cream
- 1 cup of strawberries
Blend a few strawberries and mix together with vegan whipped cream until you have a smooth baby pink cream. Blend all cake crust ingredients until they’re crumbly.
Divide crumble into jars and decorate with strawberry whipped cream and strawberries.
