Sunny spring weather isn’t here yet, so I’m continuing my yellow food theme to keep my days brighter. This 2-ingredient vegan fruit pudding is a fun experiment I did a while ago for my kids who love store bought fruit yogurts. I wanted to make a more wholesome homemade simple & quick option for their yogurt cravings.
I’m always on the search for new snack ideas, as snacking is something I love to do in the afternoon when I – or my kids – need a pick-me-up. My go-to snacks are all kinds of puddings & parfaits, bread with avocado & hummus & veggies. I’ve also been craving fatty snacks (the good kind of fat) in the afternoon to keep my energy levels more stable. Will share a recipe related to this soon.

This yellow pudding is one of my favorites too as it’s so easy to make. The base consists of two main ingredients and I added some sweetener and turmeric to get the beautiful yellow color. If the pineapple you’re using is sweet you might not need sweetener at all 🙂 And of course the turmeric is totally optional, I just love to make my foods bright and yellow (as you probably noticed if you saw this cake).
I already shared this recipe in Finnish, with crunchy muesli toppings + berries. This time I’m going for a more elegant look with my piped coconut yogurt. And it kinda looks more like a dessert this way too, which is not a bad thing for a dessert lover 😉
- [b]Basic ingredients:[/b]
- 100 g / 3,5 oz unsalted cashew nuts
- 150 g / ~5,3 oz fresh pineapple
- [br]
- [b]Optional:[/b]
- 1-1,5 tbsp lemon juice
- 1-1,5 tbsp maple syrup
- 1/2 tsp turmeric power
- dash black pepper
- Soak cashews for about 10-20 minutes in hot / boiling water.
- Chop pineapple into blendable chunks.
- Rinse and drain cashews and blend together with chopped pineapple into a smooth pudding.
- Taste and add lemon juice, sweetener, turmeric, black pepper or any other spices if you wish.
- Enjoy this simple bright colored fruity snack 🙂
